This is a simple, quick and easy meal we had a while ago. Take your favorite Italian-style sausage and some veggies you like and they come together to form a delicious meal. We had this over our favorite Parmesan Orzo with roasted asparagus on the side. If you are using a raw sausage (like I was) make sure to cut the pieces kind of small in the first place, or they will take too long to cook through.
Italian Sausage & Veggie Stir-Fry

2 tablespoons olive oil, divided
2 garlic cloves, minced
2 cups fresh broccoli florets
1 large bell pepper (or 6 mini sweet peppers), sliced thin
1/2 teaspoon oregano
salt and pepper to taste
1. Heat 1 tablespoon olive oil in a large non stick skillet over medium heat. Add sausage pieces and brown on both sides for about 5-6 minutes. (Longer if using raw sausage- cook until totally done inside.) Take sausage out of pan and set aside on a plate.
2. Heat 1 tablespoon olive oil in same skillet. Raise heat to medium high. Add minced garlic, broccoli and peppers to pan and saute for 3-4 minutes. Season with oregano, salt and pepper. Add chicken sausage back in pan and gently toss, cooking together for another few minutes until vegetables are bright and slightly crisp.
Serve over brown rice or whole wheat orzo.
*I used raw sausage; I can't get the chicken ones here. They need a lot more cooking time and complicate the recipe, so try to find the pre-cooked ones if possible!! :)

ReplyDeleteThanks ladies- it's so easy too. Just use your fave sausage and veggies. It's also good by itself; you don't need to serve it with a carb.
