Swedish Carrot Cake

We took a trip to Stockholm, Sweden back in March for Spring Break. I absolutely loved Sweden. It has so much to offer. One thing I really loved was how much they enjoy dessert there, and make time for it every day with their Fika, or coffee break. In every restaurant we went to, there was always a dessert table laid out with so many delicious things that one could choose for either dessert or Fika. I saw this carrot cake everywhere. It took me awhile to try it, since I don't love carrot cake. But I did try it, and I absolutely loved Swedish Carrot cake! It's so good- a nice thick slice with cream cheese frosting. Don't use pre-shredded carrots for this; you want the moistness from carrots you shred yourself.
Swedish Carrot Cake

Note: Makes an 8x8 inch pan. I doubled this and put in a large 9x13 pan

For the Carrot Cake:
¼ cup unsalted butter
1 ¼ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cardamom
½ cup packed light brown sugar
¼ cup granulated sugar
2 eggs
½ cup canola oil or vegetable oil
2 teaspoons vanilla extract
1 ½ cups packed grated carrots about 8 ounces

For the Cream Cheese Frosting:
6 ounces cream cheese, room temperature
4 tablespoons unsalted butter, room temperature
1 cup powdered sugar
½ teaspoon vanilla extract
*vanilla bean paste, optional, about 1/2 tsp

1.  Preheat the oven to 350 degrees. Grease and flour an 8 inch square cake pan. set aside. Place the butter in a medium saucepan or skillet (preferably not nonstick or cast iron so that you can more easily see the color change) and heat over medium low heat, swirling the pan frequently. Once the butter has melted, continue to cook over medium low swirling the pan frequently until the butter has a nutty aroma and is golden brown in color. Don’t walk away from the stove! Brown butter can go from perfect to burnt in a matter of seconds. Transfer brown butter to a bowl to cool.

2.  Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg and cardamom in a medium bowl. Whisk together and set aside.

3.  Combine eggs, brown sugar and granulated sugar in a large bowl and whisk until fully combined and no lumps of sugar remain. Slowly whisk in oil followed by cooled brown butter and vanilla extract. Keep whisking until the mixture is emulsified and cohesive.

4.  Add the dry ingredients to the wet ingredients and stir with rubber spatula until just a few streaks of flour remain. Fold in carrots until the batter is just combined. Using a rubber spatula, transfer cake batter to prepared pan. Bake for 25-40 minutes or until a tester poked into the center of the cake comes out clean or with a few moist crumbs attached. (Start testing at the lower time.) Set cake aside to cool.

5.  Meanwhile, make the frosting: Combine butter and cream cheese in work bowl of a stand mixer. Beat with the paddle attachment on medium until fully combined, scraping down the bowl with a spatula as necessary. Reduce speed to low and add powdered sugar, vanilla (and optional vanilla beans paste) and a pinch of salt. Return the speed to medium and beat until the frosting is completely smooth, about 1-2 minutes, stopping to scrape down the sides of the bowl once or twice, as necessary. 

6.  Once cake has cooled completely, spread evenly frosting on top. Serve or cover and refrigerate until ready to serve.

Laghi, Italy

Back in the fall of 2019, we took a last-minute, spur-of-the-moment day trip to Laghi, Italy.  It's not far from us, but worlds away in that it's a pristine, quiet town in the foothills of the pre-Dolomites.  I'm a member of a local Facebook travel group, and a few people there had mentioned it.  The town is tiny, tiny, and is flanked by two small lakes (Laghi is "lakes" in Italian.  We parked and took a nice serene walk around the lakes, then tried the only restaurant in town for lunch.  (Trattoria Dalla Santa).  We actually stopped in to the restaurant before our walk to ask if they could seat us, since there's 6 of us.  They told us to come back in an hour, so we did. 
It was a beautiful, slightly cool fall day, and our family all enjoyed the stroll around the outskirts of Laghi.  Afterwards, we really enjoyed eating at the Trattoria.  Their specialty is homemade pasta with a choice of three sauces.  Gnocchi is really good there, as the right kind of potatoes grow in the foothills of these mountains.  I got their homemade gnocchi with sage-butter sauce.  It was so good!  I hope we can go back to visit this beautiful place sometime soon., as soon as this craziness is over.

California Redwoods!

At the tail end of our Northwest trip last summer, we spent a week in Northern California.  We spent the time in both Eureka and Crescent City.  We went on lots of easy hikes, drives, etc to see the Redwoods.  Eureka had a great zoo with redwoods right in the zoo that we loved. Some highlights- Fern Canyon- this was our favorite hike.  You hike through a canyon where the walls are literally covered in ferns! You'll need water shoes.  Below is the only pic I really have without our fam in it (I don't share people pics here). We hiked to the end and back, and then went down and had lunch at picnic tables on the beach.  Other assorted pics, below.  The last pic is of my meal at a great restaurant we stopped by after hiking in the redwoods all day.  It was a great trip!

Central Washington State

On our Northwest trip last summer, we made a stop in Central Wa to see relatives before going on to the Oregon coast.  We always enjoy our visits here.  A few years ago I posted these pics.  This time, we went to Soap Lake just to drive around and touch the water, lol..  Pic below.

This area has some super great Mexican food.  We went with my aunt and uncle to their summer church picnic, and a local restaurant had catered these tacos.  They were some of the BEST tacos I've ever had! I got seconds even though I was full.  The beans were good too.  I wish I could have them again!!!

We also went to Leavenworth, Wa.  We love going there.  We tried a cute little bakery with tin-can cakes.  So good! It was a beautiful day.  We left some kids with at my Aunt's house to enjoy the farm- they didn't want to go so it was a win-win for everyone.

Visit to Canada

Last summer, during our Northwest trip, we took a quick trip up into Canada for a few days.  We stayed at an Airbnb in a Vancouver, BC suburb.  I love Canada and Vancouver! My husband and I spent our honeymoon there.  It's still a beautiful and friendly place.  We went to the huge Aquarium, spent a lot of time in Stanley park, got Tim Horton's, I tried Poutine, etc.  We actually didn't have that much time there.  In the neighborhood we stayed in, there was a beautiful public park we also spent a lot of time in.

Seattle, Washington


Seattle and the surrounding area is in my thoughts right now while they deal with the Coronavirus.  Seattle is such a nice and beautiful area.  While staying in Bremerton last summer, I took two day trips over to Seattle on their awesome ferry system.  One time with my daughter to meet a friend, and another time with just my husband.  I'll share some pics of both days below.  The first time I went, it was nice and sunny.  The second time, it was raining.

Bremerton, Washington

Nobody is traveling right now, and with the extra time at home, I'm finally going through my old pics from last summer's trip to the States.  We had a great summer in the Pacific Northwest.  We were in the Puget Sound area in Washington State, went up to Canada for a few days, then down to Central Washington, then down to the Oregon Coast, then to Northern California, and we ended the epic trip with a few days in Portland, Oregon before flying home.  First, though, we stayed in Bremerton, WA and we really loved it.  Today I'll post about that. We had only driven through before, or maybe skirted it, back when we lived in Puyallup WA many years ago.  I'll share some pics of Bremerton in this post.  I think Bremerton would be a great place to live. I'd love to go back.  It's a great place and we have some great memories there. 
Taking the ferry to Seattle.  From Bremerton, members of our fam took the ferry to Seattle 3-4 times (we never went all at the same time, lol, just in small groups.  I LOVED the whole ferry ride.  Loved it.)  Below, inside the giant ferry.

On the deck of our great AirBnB.  I ate breakfast out here every morning for 2 weeks.  So peaceful. Quiet, not hot (like Italy is in the summer!) with big trees everywhere, so very green.  Below is the quiche I had for breakfast a few days in a row.

We brought salmon back from Pike's Place Market in Seattle twice and cooked it at our Airbnb.  I blackened it and we had it with pasta and Caesar salad; perfect meal.  Best salmon ever.
At one of the many State parks in the area.  We were able to drive just a few minutes and hike in the forest or around the Sound.  Loved it.  Pic below- we drove into Olympic National Park one day.  Took two little hikes and had a picnic (in the car, lol).
Last pic below is walking in the forest in Port Townsend.  We visited a friend up there for the 4th of July.

Malta Vacation

We spent 8 days in Malta in June.  It was beautiful and we loved it.  We had an apartment right on the water (the pic above is our view).  It was really hot there, but there were so many nice places to swim.  We went swimming every day except for one (and that was the day we had to pick up the rental car.)  We went to the island of Comino to see the Blue Lagoon, and also the island of Gozo.
