Chewy Malted Chocolate Chip Cookie Bars

These bars were tasty, and quick and easy.  I made them in The Before.  Before Coronavirus hit Northern Italy so hard.  Yesterday we were told to not go out unless buying food or getting medicine, but today they made it even stricter to include- don't even go for a walk in your own neighborhood.  I was looking forward to taking some walks in the hills since the weather is getting nice, spring is here, and trees and flowers are blooming.  At least we still have our nice yard with plenty of blooming things. 

Anyway- these bars.  I bought malted milk powder online to make them; I can't find it here.  (If there wasn't the virus crisis right now, I'd offer local peeps to come borrow some from me so they could make this!) Later I'll experiment with making a malted milkshake (I've never had one!)  These were easy to make and popular in the house. 
Chewy Malted Chocolate Chip Cookie Bars

12 tablespoons butter, melted and cooled slightly
1 1/2 cups (11.25 ounces) dark brown sugar
2 large eggs
2 teaspoons vanilla extract
2 cups (10 ounces) all-purpose flour
1/4 cup (1.5 ounces) malted milk powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 - 1 1/2 cups (5-6 ounces) coarsely chopped malted milk balls (like Whoppers)
1 cup (about 6 ounces) chocolate chips

1.  Preheat the oven to 325 degrees F. Lightly grease a 9X13-inch metal baking pan with cooking spray. In a large bowl, whisk together the melted butter, brown sugar, eggs, and vanilla until very thick and creamy, 1-2 minutes. Add the flour, malted milk powder, baking soda and salt and mix until a few dry streaks still remain.
Add the malted milk balls and chocolate chips and stir until evenly combined.

2.  Spread the cookie dough into the bottom of the prepared pan. Bake for 20-25 minutes until the edges and top are lightly golden and the middle doesn't jiggle (but is still soft - you don't want to over bake these bars). If they look greasy and raw when you check them, add time as needed. Cool to room temperature and cut into squares.
