Black Cocoa Halloween Cookies

Happy Halloween! I still have black cocoa powder left from last Halloween, and I wanted to try it with a new Halloween treat. I got my black cocoa powder from Amazon. It's King Arthur brand.

Black Cocoa Halloween Cookies

adapted from Handle the Heat

1/2 cup (113 grams) butter, at cool room temperature
1/2 cup (100 grams) granulated sugar
1/4 cup (50 grams) brown sugar
1 teaspoon vanilla extract
1 egg, at room temperature
1 cup (127 grams) all-purpose flour
1/2 cup (43 grams) black cocoa powder (or Dutch-process), sifted
1 tablespoon cornstarch
3/4 teaspoon fine sea salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup (85 grams) white chocolate chips, plus more for garnish
1 cup (218 grams) Halloween-colored M&MS, plus more for garnish*
Edible candy eyeballs, for garnish

1. Preheat oven to 350 degrees F. Line baking sheets with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugars together on medium speed until light and fluffy, about 3 minutes. Scrape the bowl down before adding in the vanilla extract and egg, beating well to combine.

2, In a separate bowl, whisk together the flour, cocoa, cornstarch, salt, baking soda, and baking powder. Gradually add in the dry ingredients to the wet ingredients and beat until a slightly sticky dough forms. Fold in the white chocolate chips and M&Ms with a rubber spatula.

3. Using a large spring-loaded cookie scoop, drop 1-tablespoon sized balls of dough onto the prepared baking sheets, spacing them at least 2 inches apart. Dot the balls of cookie dough with extra chips, M&Ms.

4. Bake for about 8 minutes, until puffy but still soft, being careful not to overbake. Carefully press the candy eyeballs into the cookies while still hot from the oven. Allow to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Black Halloween Brownies

I recently heard of black cocoa powder from a friend and was intrigued. I had never heard of it before and was excited to try it. It's not available to me locally, so I found the King Arthur brand on Amazon. After it arrived, I used it a few days later in this brownie recipe. I reduced the flour a bit, so they'd be fudgier. The color of the cocoa powder really came through and these looked so good for Halloween.

Black Halloween Brownies
adapted from here

Brownies:
1 cup butter, melted
½ cup black cocoa powder
4 eggs
1½ Tbsp vanilla
1 3/4 cups sugar
1 1/2 cups flour

Frosting:
¼ cup butter
¼ cup black cocoa powder
¼ cup milk
sprinkle of salt
2½ cups powdered sugar

1. Preheat oven to 350° Spray a 9x13 pan with cooking spray. Set aside.

2. Use a medium (not small) saucepan to melt the butter. After the butter is melted, remove from heat. In the same saucepan, stir in sugar and black cocoa powder. Then vanilla and eggs. Last, stir in flour. Spread in prepared pan and bake 12-17 minutes until center is just set.

3. Right after removing brownies from oven, prepare your frosting by melting the butter and black cocoa powder together in a medium saucepan. Remove from heat. Add in milk and powdered sugar and whisk until smooth. Spread on frosting (it sets quickly). The brownies will still be warm. Allow brownies to cool completely before cutting into squares.
