Slow Cooker Buffalo Chicken Dip

This dip is really good, easy to make and good for a crowd. I made this the first time for my son's class party where he needed to bring food. Then I liked it so much I made it again for just our fam. This recipe uses canned chicken, and I think this is the first time I've ever used it. It's a good use for it, I think, but one could use previously cooked "fresh" chicken, as well. I even thought about subbing white beans in for the chicken for a meatless version, but haven't tried that yet. I used a homemade ranch dressing for this (made from the dry mix). 

Slow Cooker Buffalo Chicken Dip

12.5 oz can chunk chicken breast, drained, Swanson brand recommended (I use low-sodium)
8 oz cream cheese or Neufchatel, softened to room temperature
4 oz finely shredded Colby Jack or cheddar cheese
1/2 cup Buffalo Wing Sauce, or more for additional spiciness, Sweet Baby Ray's or Franks Wing Sauce recommended
1/2 cup ranch dressing
tortilla chips, celery sticks, and carrot sticks for dippers

1. Add chicken, softened cream cheese, shredded cheese, wing sauce, and ranch dressing to a 3 quart or 6 quart crock pot.

2. Stir to combine then heat on LOW until hot, 1-1/2 — 2 hours, stirring a couple of times. If using a 6 quart crock pot, the dip will be hot in about 1-1/2 hours. Serve with dippers.

King Ranch Tortilla Casserole

I really like this recipe- I've made it about 4-5 times in the last few months. It's rich, flavorful, and makes a lot. (The leftovers are great.) It actually makes a large 9x13 pan (I use my deep dish pan for this). You can cut it in half and make 2 9x9 pans. I did that last time so we could save one for later.

King Ranch Tortilla Casserole

3 tablespoons unsalted butter (can use half olive oil)
1 red bell pepper, stemmed, seeded, and chopped (about 1 2/3 cups)
1 yellow/white onion, chopped (about 1 1/2 cups)
1 tablespoon chili powder
2 teaspoons ground cumin
3 1/2 cups chicken broth
1/4 cup all-purpose flour
3 cups shredded rotisserie chicken (about 1 rotisserie chicken)
1 (10-ounce) can diced tomatoes and green chiles (such as Rotel)
1 (4-ounce) diced green chiles (I use Hatch)  
3/4 cup heavy cream
3/4 cup sour cream, plus more for garnish
1 teaspoon kosher salt
2 cups shredded Pepper Jack cheese (about 8 ounces), divided (may need a bit less)
12 (5 1/2-inch) white corn tortillas, warmed, divided
Sliced avocado, chopped tomatoes, and fresh cilantro leaves, for garnish, optional

1. Preheat oven to 425°F. Grease a deep-dish 9x13 baking dish. Melt butter in a 12-inch cast-iron skillet or large pot over medium-high. Add bell pepper and onion; cook, stirring occasionally, until softened, about 6 minutes. Add chili powder and cumin, and cook, stirring often, until fragrant, about 1 minute. Add chicken broth; bring to a boil over high, stirring occasionally. Boil until broth is reduced by about one-third, 8 to 10 minutes.

2. Reduce heat to low, and gradually whisk in flour; cook, whisking constantly, until broth mixture thickens slightly, about 1 minute. Remove from heat; stir in chicken, diced tomatoes and green chiles, heavy cream, sour cream, salsa macha verde, and salt until well combined.

3. Spoon 2 cups chicken mixture into prepared baking dish; spread in an even layer. Top evenly with 1/2 cup cheese and 6 tortillas, overlapping slightly and tearing as needed to fit. Repeat layering process with chicken mixture and cheese. Top with remaining 6 tortillas, remaining 2 cups chicken mixture, and remaining 1 cup cheese. Sometimes I don't use all of the cheese. 

4. Bake casserole in preheated oven until bubbly and cheese is browned in spots, 15 to 20 minutes. Garnish with sliced avocado, cilantro, and sour cream.

Slow Cooker Chicken Corn Chowder

This was a delicious and easy to prepare chicken corn chowder recipe. I prepped this the night before, but kept the potoates in an airtight container soaking in cold water. In the morning, I drained the potates in a strainer and just added them to the top, then plugged the crockpot in. I also just used whole, frozen chicken tender pieces and shredded them after cooking. This way I could make this on a work morning.

Slow Cooker Chicken Corn Chowder

2 tablespoons extra-virgin olive oil
2 pounds boneless skinless chicken tenders, breasts, or thighs
2 teaspoons salt
1/2 teaspoon black pepper
8 large cloves garlic crushed
1 tablespoon minced fresh thyme
1 large yellow onion chopped
1 large red bell pepper chopped
3 large stalks celery sliced
20 ounces frozen sweet corn, no need to thaw
1 1/2 pounds yellow potatoes scrubbed and cut into 1-inch cubes
1 bay leaf
4 cups chicken stock or chicken broth
1 cup heavy whipping cream
3 tablespoons cornstarch
real bacon bits, for garnish

1. Drizzle the oil across the bottom of a slow cooker. Spread out the chicken in an even layer across the bottom. Sprinkle on the salt, black pepper, garlic, and thyme. Add the following in even layers: onion, bell pepper, celery, corn, and finally the potatoes. Add the bay leaf. Pour in the chicken broth. (Don’t stir.) Cook until the chicken is fully cooked and the vegetables are tender, on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours. At the end of the cooking time, shred the chicken with two forks. 

2. Mix together the cream and cornstarch in a small bowl. If you’re cooking on LOW, stir in the cream/cornstarch mixture during the last 30 minutes of cooking. If you’re cooking on HIGH, stir in the cream/cornstarch mixture during the last 15 minutes of cooking.

3. If you want the soup even thicker, you can puree 2 cups of it in a blender and stir it back in, or simply use a potato masher to partially mash the soup when it’s done cooking. (Note that this soup will thicken more as it cools.) Serve garnished with bacon.

Pumpkin and White Bean Chicken Chili

I really enjoyed this chili, and it was easy to make in the slow cooker. I love savory pumpkin dishes, beans, and soups, so this was perfect. I also love using my slow cooker. I put this together in the insert of the crockpot the night before and stuck it in the fridge. In the morning before work, I pulled out the insert with the ingredients inside, put it into the metal part of my crockpot, plugged it in and turned it on to "Low". It was perfect that evening. 

Pumpkin and White Bean Chicken Chili
adapted from Closet Cooking

1 onion, diced
4 cloves garlic, chopped
2-4 chipotle peppers in adobo, chopped (or 1-2 tablespoons chipotle chili powder) (I used chipotle paste I bought on Amazon)
1 tablespoon smoked paprika
1 tablespoon ground cumin
1/4 teaspoon ground cinnamon (optional)
4 cups chicken broth
2 cups pumpkin puree (or 1 15 ounce can)
2 (15 ounce) cans white beans, rinsed and drained
1 (15 ounce) can diced tomatoes
1 pound boneless and skinless chicken breasts (or thighs)
1 teaspoon oregano
4 ounces cream cheese, warmed
1 tablespoon lime juice (optional)
salt and black pepper
1/4 cup fresh cilantro, chopped, plus more for serving (I didn't have this so I used fresh sage- lol)

1. Place all ingredients into the crockpot except cream cheese, lime juice, salt, pepper, and optional cilantro. Cook on LOW for 8-10 hours or HIGH for 4-6 hours. Shred chicken in crockpot using two forks. Add cream cheese and let it melt. (May need to use a whisk, and you may have a few lumps remaining- it's ok.) Add lime juice, and add salt and pepper to taste. Serve with fresh cilantro, optional.

Easy Slow Cooker Butter Chicken

I love this recipe. I've made it about 3 times, and am about to make it again soon. It's different from other slow cooker Indian food recipes I've made because you chop the raw chicken first, not shred it after cooking. I love the ease of those shredding recipes but I like the taste and texture of this recipe more. It's still an easy and low-work recipe. If you don't want to chop chicken, you can buy it pre-chopped in some stores. I double this recipe when I make it so we have leftovers for lunch. I don't always double the chicken, but just increase it a little bit. I also don't double the butter, but just increase it to 5 or 6 tablespoons.

Easy Slow Cooker Butter Chicken

15 ounce can tomato puree
6 to 8 large cloves garlic peeled and crushed*
1 tablespoon freshly-grated ginger* (can use ginger-garlic paste in place of garlic and ginger*)
1 1/2 tablespoons coconut sugar or light brown sugar
4 teaspoons garam masala
1 1/2 teaspoons salt
1 teaspoon smoked paprika 
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
2 pounds boneless skinless chicken thighs trimmed of fat and cut into bite-sized pieces (I use chicken tenderloins or breasts)
1 large onion, finely diced (about 2 to 2 1/2 cups finely diced)
8 cardamom pods, cracked open
2 cinnamon sticks
1 bay leaf
4 tablespoons butter, cut into small pieces
1/4 teaspoon ground fenugreek optional (I used 1/2 tsp fenugreek leaves from Amazon)
1/2 cup heavy whipping cream
1 tablespoon fresh lemon juice

Optional Garnish Suggestions
Fresh cilantro leaves for garnish
Fresh lime wedges for garnish
Prepared basmati rice
Naan

1.  Add the tomato puree, garlic, ginger, coconut sugar, garam masala, salt, smoked sweet paprika, coriander, cumin, cayenne pepper, and black pepper to a slow cooker, and whisk to combine. Add the chicken, onion, cardamom pods, cinnamon sticks, and bay leaf, and stir to coat the chicken, spreading it out evenly. Scatter the butter pieces on top.

2.  Cover and cook on HIGH for 2 to 3 hours or on LOW for 4 to 5 hours. At the end of cooking, stir in the fenugreek, cream, and lemon juice. Serve garnished with fresh cilantro and lime wedges, along with prepared basmati rice and/or naan if desired.

Instant Pot Creamy Chicken Enchilada Soup

I loved this soup! This is the first recipe I ever made in my Instant Pot.... that I bought almost 10 years ago. Lol! I've been scared of it. My husband has used it from time to time, but I didn't take the plunge until a friend gave me this recipe and super-simple instructions that made me feel more confident in making it. It was super helpful and I made this soup twice recently! It makes a LOT, so the 2nd time I made it, I reduced the broth down to 2 cups. It still made a lot and was a little thicker this way, which I also liked. Go ahead and use 4 cups if you want more soup. 


Instant Pot Creamy Chicken Enchilada Soup

3 boneless chicken breasts, skinless
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
1 teaspoon Sriracha sauce
1 onion, diced
1 red, yellow, or orange bell pepper, diced
15 ounce can black beans, rinsed and drained
15 ounce can corn, do not drain
19 ounces red enchilada sauce
4 cups chicken broth (use 2 cups for a thicker soup)
salt and pepper, to taste
½ cup heavy cream
½ cup sour cream
sharp cheddar cheese, shredded, for garnish
cilantro, for garnish
tortilla chips, for garnish

1.  Put everything in the pot except the heavy cream, sour cream, and garnishes. Put the lid on. Move the vent knob on top to “seal”. Press the “manual” button and reduce (the 30-minute time that will show on the front) to 20 minutes. 

2.  After 20 minutes is up on the Instant Pot, move the knob on top to “vent” and let all of the steam out. Shred chicken in the pot using 2 forks. Stir in heavy cream and sour cream.

3. Serve with the garnishes and enjoy. :)

Creamy Chicken and Corn Chowder

My husband and I loved this chowder. I've made it twice recently. It comes together quickly using meat from a rotisserie chicken. When I've made this, I buy a rotisserie on the weekend, enlist my husband to get the meat off, and freeze 3 cups of it so I can make this soup in the coming week. It makes it easy to get this on the table on a weekday. This chowder is wonderful with these quick Garlic Cheese Biscuits


Creamy Chicken and Corn Chowder

3 cups cooked shredded chicken (from a rotisserie chicken)
1/4 cup butter
1 large red bell pepper, chopped (about 1 1/2 cups)
1 medium yellow onion, chopped (about 1 1/4 cups)
4 cloves garlic, minced (can use 1 tsp. of garlic powder if desired)
1/3 cup all-purpose flour
6 cups low-sodium chicken broth
3 medium (22 oz) potatoes, peeled and chopped slightly less than 1/2-inch thick (I used yellow)
2 bay leaves
Salt and black pepper, to taste
2 1/2 cups fresh or frozen corn
1 1/2 cups half and half
real bacon bits OR cooked bacon, for topping
Chopped green onions and shredded cheddar cheese (optional)

1. In a large pot, melt butter over medium heat. Add red bell pepper and onions; saute until tender, about 3 minutes. Add garlic and cook 30 seconds longer. Stir in flour, and cook 2 minutes stirring constantly. While stirring, slowly pour in chicken broth. Add potatoes, bay leaves and season with salt and pepper to taste. Bring mixture to a simmer stirring frequently, then reduce heat to low and simmer, uncovered, 20 to 25 minutes until potatoes are tender, stirring occasionally. 

2. Add in cooked chicken, corn and half and half and simmer, uncovered 5 minutes longer, stirring occasionally. Serve warm topped with cooked bacon and optional green onions and cheese.

Thai Crockpot Curry Chicken

We enjoyed this red Thai curry made in the crockpot. I liked the addition of veggies that I usually don't use in curry, like cauliflower and butternut squash. (I subbed the squash for the sweet potato in this recipe.) In Italy one can buy pre-cut butternut squash rear-round, so that's what I used here. (It's labeled "zucca", or pumpkin.)
Thai Crockpot Curry Chicken   
adapted from Carlsbad Cravings 

CURRY SAUCE
1 14. oz can full-fat unsweetened coconut milk
2-4 tablespoons red curry paste depending on brand 
1 tablespoon freshly grated ginger
4-6 garlic cloves, minced
2 tablespoon Asian/Thai Sweet Chili Sauce (like Mae Ploy)
2 tablespoons less sodium soy sauce
2 tablespoon fish sauce
1 bay leaf or dried kaffir lime leaf
1 teaspoon dried basil
1/2 tsp EACH onion powder, ground coriander

CHICKEN AND VEGGIES
1 1/4 lbs. boneless, skinless chicken thighs, trimmed of fat
1 large sweet potato, peeled, chopped into 1/2-inch pieces (OR equivalent pumpkin or butternut squash)
2 cups cauliflower florets
1 bell pepper (any color), sliced

ADD LATER
1 1/2 tablespoons cornstarch
1/4 cup water
2 tablespoons lime juice
1/4 cup creamy peanut butter
2-4 teaspoons sriracha/Asian chili sauce

GARNISH (PICK YOUR FAVES)
crushed peanuts or cashews 
lime juice to taste
fresh basil
fresh cilantro
sweet Thai chili garlic sauce

1.  Add curry sauce: Lightly spray slow cooker insert with cooking spray. Add the Curry Sauce ingredients and whisk to combine. Add the chicken, cauliflower and sweet potatoes and stir to combine, making sure the chicken is submerged after stirring. You can add the bell peppers now for soft bell peppers or about ⅓ way through cooking for firmer peppers.

2.  Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the chicken is cooked through to 165 degrees F on an instant-read thermometer. (Always check for doneness on the earlier end of the cooking window, then cook on as needed.) Meanwhile, in a small bowl, whisk the cornstarch together with ¼ cup water to make a slurry. Stir into the slow cooker along with the peanut butter and lime juice. Shred the chicken right in the crockpot with 2 forks. 

3. Cook UNCOVERED on HIGH for 15-20 minutes, until the sauce thickens. Add desired amount of Asian chili sauce to taste. Adjust to taste with lime juice, soy sauce, etc. Garnish servings with optional crushed peanuts, casshews, fresh basil, cilantro, lime juice and chili sauce. Serve with rice.

Honey Chipotle Lime Chicken Bowls



These bowls were so full of flavor and delicious. You have a bed of cilantro-lime rice, topped with spinach and other veggies, and then you add the grilled chipotle chicken and finish it off with a cilantro-lime ranch dressing. So much flavor! The leftover dressing and grilled chicken really dress up a plain salad, too. You can make the cilantro-ranch ahead, plus set the chicken to marinate. 

Honey Chipotle Lime Chicken Bowls   

Honey Chipotle Lime Chicken:
2 tablespoons olive oil
2 tablespoons freshly squeezed lime juice (I use bottle key lime)
2 tablespoon honey
2 tablespoons finely chopped chipotle peppers and adobo sauce, mostly sauce if you can (I use jarred paste)
1 tablespoon Dijon mustard
4 to 5 cloves garlic, finely minced or pressed through a garlic press
2 to 3 tablespoons chopped fresh cilantro
½ teaspoon salt, I use coarse, kosher salt
Pinch of black pepper
2 pounds thin cut boneless skinless chicken breasts 

Bowls:
Spinach, lettuce or spring mix
Chopped tomatoes
Chopped or sliced avocado
Fresh limes
Pickled jalapenos or banana peppers
Cilantro lime rice, recipe below
Cilantro lime dressing, recipe below

1.  For the marinade, whisk together the olive oil, lime juice, honey, chipotle peppers and sauce, Dijon mustard, garlic, cilantro, salt and pepper. Place the chicken in a shallow dish or ziploc bag and pour the marinade over the top. Make sure the chicken is evenly coated. Cover and refrigerate for 2 to 24 hours (the flavor gets better the longer it marinades).

2,  Cook the chicken on a grill, in a skillet or in the oven (broiled) until cooked through, about 4-5 minutes per side, depending on how it’s cooked. Let rest for 5-10 minutes. Slice the chicken into strips and serve with any or all of the bowl ingredients. (Add your own to the list, too!)

Cilantro Lime Rice

1 tablespoons butter
1 ¼ cups rice, long grain white rice or jasmine rice works best
2 ¼ cups low-sodium chicken broth
¾ teaspoon salt
¼ teaspoon freshly ground black pepper
Juice and zest of 1 large lime (I used 2 TBS key lime juice)
2 tablespoons chopped cilantro
¼ teaspoon ground cumin

Rice cooker (stovetop directions below)- Add all of the ingredients to your rice cooker except the lime juice and cilantro. Turn the rice cooker on to cook. When rice is done cooking, stir in the lime juice and cilantro with your rice paddle. Serve. 

Stovetop- In a skillet or medium saucepan, melt the butter and add the rice. Stir, letting the rice and butter cook for 1-2 minutes. Add remaining ingredients and bring to a boil. Reduce heat, cover and cook for 15-16 minutes. Remove from heat and let stand, covered, for 10 minutes. Fluff with fork and serve.

Cilantro Lime Dressing

½ cup buttermilk (I used buttermilk powder + water with good results)
½ cup mayonnaise
½ cup sour cream, light or regular
¼ cup salsa verde or a small can of Hatch chilis
1 tablespoon fresh lime juice, from about 1 medium lime (I used bottle key lime)
1 teaspoon garlic powder
1 teaspoon dried parsley
½ teaspoon onion powder
Pinch of dried dill, about 1/8 teaspoon
Pinch of salt, I use coarse, kosher salt
Pinch of black pepper, I use coarsely ground black pepper
½ cup coarsely chopped cilantro
1 green onion, white and green parts coarsely chopped, or small bunch of chives (can be left out if needed)

1. Combine all the ingredients in a blender (or use an immersion blender) and process until smooth. Thin with additional buttermilk, milk, or lime juice, if you want to adjust the consistency. Refrigerate until ready to serve (the taste gets better with time – it can be made several days in advance).

Sweet and Sour Chicken

My husband and I really love this recipe for Sweet and Sour Chicken. It is a lot of work compared to things I usually make- first, you have to chop chicken into bite-sized pieces. Then, coat in cornstarch, then beaten egg, and lightly fry in shallow oil. You then whip up a quick sauce and pour it over the chicken in a 9x13 baking dish and bake for an hour. All of this to say- this recipe is worth the work! It has a great taste and texture. The leftovers are great too, just warmed up in the microwave. I've made this twice, and just serve it with steamed broccoli (frozen brocc, since I'm too tired to chop any broccoli after preparing this, lol!)

Note: I double the sauce on this..... I'm re-writing the recipe below with that change. 
Sweet and Sour Chicken 
adapted from Mel's Kitchen Cafe

3-4 boneless, skinless chicken breasts (about 2 pounds- chicken tenders are also good!)
Salt and pepper
1 cup cornstarch
2 large eggs, beaten (may need an extra egg near the end of the dipping/coating)
¼ cup canola, vegetable or sunflower oil (may need extra oil near the end of frying)

Sauce:
¾ cup granulated sugar, depending on how sweet you want the sauce
1/2 cup ketchup
1 cup apple cider vinegar (can use a mix of this and rice vinegar)
2 tablespoons soy sauce
2 teaspoon garlic salt

1.  Preheat the oven to 325 degrees F. Cut the chicken into 1-inch or slightly larger pieces. Season lightly with salt and pepper. Place the cornstarch in a large bowl. Put the chicken into the bowl with the cornstarch. Using a good pair of tongs, move the chicken around to coat it in cornstarch thoroughly. 

2.  Whisk the eggs together in a shallow pie plate. Heat the oil in a large skillet over medium heat until very hot and rippling. Dip the cornstarch-coated chicken pieces into the egg and place them carefully in a single layer in the hot skillet. (Another set of tongs is great for this part- one set for the cornstarch bowl, one for the egg bowl. I actually use a third pair for the frying part.) 

3.  Cook for 20-30 seconds on each side until the crust is golden but the chicken is not all the way cooked through (this is where it’s really important to have a hot skillet/oil). Place the chicken pieces in a single layer in a 9X13-inch baking dish and repeat with the remaining chicken pieces. (Note: While one batch of chicken is frying, prepare the next batch by placing some cornstarch-coated pieces in the egg wash and coating them with that.) 

4.  Mix the sauce ingredients together in a medium bowl and pour over the chicken. Bake for one hour, turning the chicken once or twice while cooking to coat evenly with sauce. (My chicken seems to be perfect at 50 minutes. Check here, and if anything seems to be drying out at all, remove from the oven and serve.) Serve over hot, steamed rice.

Crispy Baked Chicken Tacos + Cilantro Lime Rice

These tacos were so tasty, with a great crisp texture, as well. I want to use this method with other filling and make crispy baked tacos galore. This recipe made 10 crispy tacos, which was enough for my fam to have 2 each, and everyone wanted more. This recipe used homemade red enchilada sauce, homemade Cilantro Lime Rice (optional; recipe at bottom of this post) and a homemade cilantro sour cream dressing. I'll include all recipes below. (Note: you'll only need about 1/2 recipe of the enchilada sauce... I used the rest in a new Sweet Pork recipe.... I'll post that one later.  OR, you could just make 1/2 recipe.)  I made the enchilada sauce the day before, and de-boned a rotisserie chicken the day before, so that when it came time to make dinner, I just had to assemble everything. One could use a can of red enchilada sauce, but I've never enjoyed the flavor of the canned stuff. If you do though, by all means, try it in this recipe!

One could make these for Cinco de Mayo!! 

Crispy Baked Chicken Tacos

1/2 recipe Homemade Enchilada Sauce, recipe follows
4 cups shredded chicken (I used rotisserie chicken)
12 soft white corn tortillas
2 cups favorite shredded cheese (I used cheddar)

Cilantro Lime Sauce
1 cup sour cream or plain Greek yogurt
2 tablespoons lime juice
1-2 tablespoons milk
1/2 cup packed cilantro, finely chopped (measure before chopping)
2-4 tablespoons chopped pickled jalapenos (optional)
1/2 tsp EACH garlic powder, onion powder, dried parsley, dried chives, dried dill
salt, pepper to taste

Red Enchilada Sauce (make 1/2 recipe if not needing it for another recipe):
3 tablespoons all-purpose flour
3 tablespoons chili powder NOT cayenne pepper
1 tsp EACH ground cumin, garlic powder, onion powder, ground coriander
1/2 tsp EACH smoked paprika, salt, dried oregano
1/4 teaspoon cayenne pepper optional for spicier
2 tablespoons unsalted butter
2 tablespoons vegetable oil or other neutral oil
1/4 cup tomato paste
3 cups reduced sodium chicken broth
1 teaspoon unsweetened cocoa powder
1 teaspoon sugar
a pinch of cinnamon
1 teaspoon apple cider vinegar

Optional Toppings: 
Guacamole
Pico de Gallo
Pickled Red Onions
Hot Sauce

1.  Cilantro Lime Ranch: Whisk all of the ingredients together in a medium bowl. Refrigerate until ready to serve. I made this a day ahead.

2.  Enchilada Sauce. Whisk the flour and all seasoning together in a small bowl (through oregano or optional cayenne pepper); set aside. Melt the butter in the vegetable oil in a large cast iron skillet over medium heat. Whisk in the flour mixture and cook while whisking for 2 minutes. Whisk in the tomato paste until completely combined and continue to cook for 1 minute. Reduce the heat to low, then gradually whisk in the chicken broth. Continue to whisk until smooth and the lumps are dissolved. Whisk in cocoa powder, sugar and cinnamon. Bring the sauce to a simmer and continue to simmer, whisking often, until it thickens to your desired consistency, about 5-7 minutes. Keep in mind the sauce will thicken a little as it cools. Remove from heat and stir in apple cider vinegar. Taste and adjust seasonings as desired with additional salt, cayenne, sugar or vinegar. If the sauce thickens too much, simply whisk in additional chicken broth, a little at a time until it reaches desired consistency.

3.  Preheat the oven to 425 F. Chicken: Add desired amount of sauce to the shredded chicken in a large bowl (more or less depending on how "saucy" you like your tacos) and stir to combine.

4.  Prep tortillas: Working in 2 batches, place 6 tortillas between two damp paper towels and microwave for 30-60 seconds, or until pliable. Lightly brush the top of the tortillas with olive oil then flip over (the oiled side should now be face down, touching the baking sheet so it gets crispy).

5.  Assemble: Add a layer of cheese to the bottom half of the tortilla and top it with about 1/4 to 1/3 cup chicken. Fold the tortillas over in half and lightly press so they stay folded, you may need to flip the whole taco over so it stays. Repeat with remaining tortillas.

6.  Bake: Bake at 425 degrees F for 8 minutes, flip the tacos over and bake an additional 8 minutes. If the tortillas aren’t crispy, then flip and bake an additional 5 minutes OR until crispy. Stuff with desired toppings and eat. If desired, serve with Cilantro Lime Rice, recipe below.

Cilantro Lime Rice (Rice Cooker)
adapted from Carlsbad Cravings 

1 cup white rice (I used jasmine)
1 1/2 cups chicken broth
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon onion powder
dash cayenne pepper
1 4-oz can diced green chiles (I used Hatch)

1.  Add rice, chicken broth (check amount according to your rice cooker), 1 teaspoon garlic powder, 1 teaspoon ground cumin, 1 teaspoon onion powder, dash of cayenne pepper, and 3 tablespoons mild diced green chiles.

2.  Set rice cooker to cook setting. Once rice is cooked, stir in butter to melt and season with salt and pepper to taste. Stir in 2 tablespoons lime juice and ½ cup loosely packed cilantro, chopped. Serve with tacos.

Super-Easy Chicken Cordon Bleu w/Roasted Broccoli


This recipe was super good, and super easy. It is Chicken Cordon Bleu; by far, the easiest version I've ever made (and I've made other easy versions!) This one is just layered on a pan, no stuffing/rolling involved, and your veg bakes right along with the chicken, so it can be a one-dish meal. One can add rice or a parmesan orzo to make the meal go farther, but it's not needed.         

Super-Easy Chicken Cordon Bleu w/Roasted Broccoli

2 tablespoons olive oil
1 ½ pounds broccoli, cut into spears/thin wedges 
Salt and pepper
4-5 thin chicken breast cutlets (buy cutlets, or cut breasts in half and pound thin) 
2 tablespoons Dijon mustard
4 to 8 slices deli ham, exact amount depends on brand/size of slices
4 to 8 slices Gruyere or Swiss cheese
¾ cup Ritz crackers (about 15), coarsely crushed

1.  Preheat the oven to 450 degrees. Make sure an oven rack is in the lower-middle position. Brush a large, rimmed baking sheet (about 11X18-inches) with 1 tablespoon of the oil. Place the broccoli on one side of the sheet pan, and drizzle with remaining oil. Sprinkle with salt and pepper.

2. Place the chicken cutlets side-by-side on one side of the prepared baking sheet (to help them fit, you can alternate thicker end to thinner end as you lay them down). Placing them close together (without overlapping) will help the cheese stay put as they bake. Sprinkle lightly with salt and pepper. Spread the mustard lightly over the top of each chicken piece. Top with 1 to 2 slices ham to cover and then add one or two slices of the cheese evenly across the top. Sprinkle the cracker crumbs evenly over the cheese and press lightly so the crumbs aren’t loose.

3.  Bake for 20 minutes until the chicken registers 160 degrees F on an instant-read thermometer and the broccoli is roasted and tender. The exact time will depend on the thickness of the chicken. If the chicken still needs more time but the broccoli looks like it is finished, scoop the broccoli off the sheet pan onto a plate and lightly tent with foil while the chicken finishes cooking.

4. For a better presentation, remove the chicken and broccoli as soon as it comes out of the oven so it doesn't sit in the juices in the bottom of the pan. I did not do this; to keep with the ease of a one-pan meal (and laziness). It was fine to leave it in the pan for serving.

Rosemary Ranch Grilled Chicken


The whole fam loved this grilled chicken. It was quick and easy to prepare, too. I set aside some of the marinade to brush on veggie skewers that we also threw on the grill. We had homemade Ranch (from the packet) in our fridge so we used that. If you have bottled Ranch on hand, I'd just use that- I wouldn't make homemade just for this. After making this, I started brushing veggies with just Ranch before grilling them; it's pretty good, and provides a lot of flavor. (I use bottled salad dressings often for a grilled veggie marinade; they're always tasty.)        

Rosemary Ranch Grilled Chicken

¼ cup olive oil
½ cup ranch salad dressing 
¼ cup Worcestershire sauce
2 tablespoons fresh lemon juice or red wine vinegar
1 tablespoon finely chopped fresh rosemary
1 teaspoon salt
¼ teaspoon black pepper
1 ½ – 2 pounds chicken breasts (I like chicken tenders)

1. For the marinade, whisk together all the ingredients except the chicken until well-combined.
Place chicken in shallow dish or a large ziplock bag and pour the marinade over the chicken, turning the chicken to coat evenly. Cover the dish and refrigerate for 8-12 hours.

2. Grill the chicken on medium-high, about 3-4 minutes per side (exact time will depend on the thickness of the chicken) until cooked through and an instant-read thermometer registers 165 degrees F at the thickest part of the chicken. Tent the chicken with foil and let rest for 10 minutes before slicing and serving.

Chicken Korma


This is a re-post of an old recipe from the days of yore. Really, really yore- 2009, to be exact. I loved this recipe back then, but stopped making it for some reason. Recently, after enjoying lamb korma at a local Indian restaurant, I wanted to make Korma again myself, so I took my old recipe and adapted it quite a bit, for the better. (Note: Top 3 photos were taken when we forgot to add the cream- last photo is with cream included. The recipe is wonderful both ways but cream is always good!)  Also: pictured on the side of the Korma is Aloo Gobi.  

Chicken Korma

1/4 cup cashews 
3-4 tablespoons unsweetened coconut chips/flakes (optional for a sweeter flavor)
1/4 cup boiling water
3 cloves garlic, peeled
1 (1/2 inch) piece fresh ginger root, peeled and chopped (may sub a few TBS of ginger/garlic paste for ginger and garlic)
3 tablespoons coconut oil, vegetable oil, or ghee
2 bay leaves
1 large onion, minced
1 teaspoon ground coriander
1-2 teaspoons garam masala (I prefer 2 tsp)
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon chili powder
1/2 teaspoon salt, or to taste
2-3 skinless, boneless chicken breast halves - diced (can use less)
1 15-oz can tomato sauce
1 cup low-sodium chicken broth
1/2 cup heavy cream
1/2 cup plain yogurt
palm sugar or brown sugar, to taste, optional (to add sweetness)

1. Place cashews in a small bowl and pour the boiling water over coconut and cashews. Set aside for 15 to 20 minutes.

2. Meanwhile, heat oil in wok over medium heat. Cook the bay leaves in hot oil for 30 seconds. Stir in onion, and cook until soft, about 3 to 5 minutes. Mix in garlic/ginger paste and season with coriander, garam masala, cumin, turmeric, chili powder, and salt. Stir in chicken, and cook for about 5 minutes. 

3. Pour in tomato sauce and chicken broth. Cover, reduce heat, and simmer for 15 minutes, stirring occasionally.

4. Meanwhile, place the cashews, coconut (if using) along with the water in which they were soaked, and the cream and yogurt into food processor. Process until smooth.

5. Stir the cashew mixture into the chicken and onions. Simmer for 15-30 minutes, stirring occasionally, until thickened to your liking.  Taste for salt and add more if necessary. I add about 2 tablespoons of palm sugar here for some sweetness. You can also add more garam masala at this point if you wish for a stronger flavor. Serve over rice.

Lemon-Garlic Grilled Chicken

I loved this recipe- it was super quick to put together, easy to grill, and everyone loved it.  The chicken was so tender and flavoful.  This is great by itself but would also be awesome added to a Caesar Salad.  
    Lemon-Garlic Grilled Chicken

    Juice of 1 lemon, approximately 3 tablespoons
    2 to 3 tablespoons olive oil
    1 teaspoon minced garlic, about 2 medium cloves
    1 teaspoon salt (I use coarse, kosher salt)
    1/4 teaspoon pepper
1/2 teaspoon dried oregano
1 to 2 pounds thin chicken breasts cutlets or tenders

1.  Whisk together all the marinade ingredients.

2.  Place chicken in a ziploc bag or shallow dish and pour the marinade over chicken, tossing to coat the chicken evenly with the marinade. Refrigerate for at least 4 hours but up to 18 hours.

3.  Preheat grill to medium- or medium-high and cook for 3-4 minutes on each side until an instant read thermometer registers 165 degrees at the thickest part of the chicken. (The chicken can also be cooked in a skillet on the stove or broiled in the oven.)

BBQ Chicken Salad w/Creamy Cilantro Dressing

This salad was so flavorful and just fun to eat.  The chicken is supposed to be tossed in BBQ sauce, but I skipped that.  I did include the BBQ sauce in the dressing like the recipe stated, and that was good.  I need to make big salads like this more often.  Now that spring is here, I plan on more salads like this.  
BBQ Chicken Salad w/Creamy Cilantro Dressing

CHICKEN AND SALAD:
3 cups cooked, shredded chicken
2 cups BBQ sauce, optional (see below)
½ head iceberg lettuce, cored and chopped
2 romaine hearts, chopped
1/2 red onion diced
¼ cup chopped fresh cilantro
1 1/2 cups frozen corn, thawed
1 can (15 ounces) black beans, rinsed and drained
2-4 ounces sharp cheddar cheese, cubed small or shredded
2-4 ounces Monterey jack cheese, cubed small or shredded

CREAMY BBQ CILANTRO LIME DRESSING:
1 cup mayonnaise, light or regular
1/3 cup milk
1/3 cup buttermilk 
2 tablespoons fresh cilantro, finely chopped
1 tablespoon lime juice
1 teaspoon white or apple cider vinegar
1 teaspoon granulated sugar
1 garlic clove, finely minced
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon black pepper
1/4 teaspoon ground cumin
1/4 to 1/2 cup BBQ sauce

1.  For the salad, combine the cooked chicken and BBQ sauce in a medium bowl. Refrigerate until ready to use. (I chose to just use plain chicken here, no BBQ.  But it'd be good either way.)

2.  In a large bowl, toss together the iceberg lettuce, romaine lettuce, red onion, cilantro, corn, black beans and cheese. Toss the mixed salad with about 1/4 to 1/2 cup of the dressing, if desired. OR, you can serve the dressing on the side, which is what we did. Place salad on plates and top with the prepared BBQ chicken and additional dressing.

3.  For the dressing, combine all the ingredients together and whisk (or shake, if using a jar) vigorously to combine. I choose to mix in my food processor for a smoother dressing.  Refrigerate until ready to serve.
